Leftover ideas

So I promised leftover ideas to use with the chicken dinner I posted yesterday. In my own experience, I tend to just reheat leftovers in the same way I ate them the first time around. But sometimes I get bored when I make way too much of any one thing, and I just want to eat something new while still using up the food in the fridge. So here’s a quick-hit list of ways we talked about in class to repurpose chicken dinner leftovers:

Enchiladas - most recipes call for cooked chicken anyway
Stocks or soups - any veggie scraps or cheese rinds can be thrown in for extra flavor and body, too
Rice - toss shredded, cooked chicken into the rice cooker while your rice bubbles away
Stir-fry - chicken doesn’t have to start out raw to cook up well with mixed vegetables and a little soy sauce and garlic
Casseroles - with enough liquid, there’s little chance of drying out your meat
Salads - over greens with ceasar dressing or with mayo and other goodies (try capers, they’re delicious in chicken salad) on a sandwich
Sandwiches - think barbecue-style pulled pork, but with chicken

There are countless variations on any of these ideas, and I’ve no doubt there are countless more ideas that I haven’t even touched on. What are some of the ways you reinvent the wheel with leftover chicken?
