Bisquick Quicky

I hope many of you are preparing for a relaxing three-day holiday weekend. For those of you spending down time at home, I’m sharing a quick and easy recipe that would be great for a leisurely brunch, a first course, or an appetizer.
I’ve made this many times and it is especially tasty when served with a big dollop of zesty salsa. The recipe I’d torn out noted it was from the Betty Crocker test kitchens and one of Bisquick’s more popular recipes. The recipe notes Bisquick’s Original baking mix should be used.
Impossible Green Chili-Cheese Pie
• 2 (4-ounce) cans chopped green chilies, well-drained
• 4 cups coarsely shredded sharp cheddar cheese (about 1 pound)
• 2 cups milk
• 4 eggs
• 1 cup biscuit mix
Preheat oven to 425 degrees. Grease 10 1/2-in pie plate. Sprinkle chlies and cheese over bottom of prepared pie plate and set aside.
Blend milk, eggs, and biscuit mix in electric-blender at high speed until smooth — about 15 seconds. Or beat in large electric mixer bowl at high speed 1 minute. Pour into pie plate.
Bake uncovered, until knife inserted in center of pie comes out clean — 25 to 30 minutes.
Cool on wire rack 10 minutes, cut into wedges, and serve.
Makes 8 servings.
