Quick Quiche

Since Sunday is the big Super Bowl game, thought some folks might be looking for a quick and simple dish for breakfast. I love quiche and the recipe below is one I’ve used several times and really like it.
The recipe comes from a Taste of Home cookbook I’ve had for several years titled “Best of Country 30-Minute Recipes.” The recipes in the book are described as geared for “on-the-go cooks who beat the clock when feeding their families down-home foods loaded with flavor.”
I think the quiche below definitely fits that goal. Add some hot muffins and fresh fruit and you’re set to go!
Bacon Cheddar Quiche
Val Forsythe, Albert Lee, Minnesota
• 14 bacon strips, cooked and crumbled
• 1 cup (4 ounces) shredded cheddar cheese
• 1 6-ounce jar sliced mushrooms, drained
• 1 tablespoon dried minced onion
• 5 eggs
• 1 5-ounce can evaporated milk
• ¼ teaspoon cayenne pepper
In a greased 9-inch microwave-safe pie plate, layer the bacon, cheese, mushrooms and onion. In a large bowl, beat the eggs, milk and cayenne; pour over the onion.
Microwave, uncovered, on high for 6 minutes, stirring twice. Cook 2 to 3 minutes longer or until knife inserted near the center comes out clean. Let stand for 5 minutes or until set. Cut into wedges.
Yield: 4 to 6 servings.
